Take a set of basic foods – meat and vegetables. Stew them with one set of flavourings, and you have an almost-classic Middle Eastern or North African dish. Stew them with another set of flavourings, and you have an almost-classic French-style dish. Magic. |
A Arabian half teaspoon Cinnamon half teaspoon Cumin half teaspoon paprika half a crushed green chilli 1 sprig Coriander (Cilantro), chopped half-inch piece of Ginger |
B French half teaspoon Fines Herbes 1 sprig parsley, chopped 2 glass dry red wine 1 teaspoon Dijon mustard |
Preparation Heat olive oil until it makes a crushed piece of garlic sizzle. Add garlic and meat and brown. Add dried spices/herbs from either column A or B. Add all vegetables (chopped up) and half cover with water (or wine for option B). Stew very gently for more than 90 minutes. Add more liquid as necessary. Add more spices/herbs if needed. Serve alone or with bread. |
