Hemlock's Recipes Green Chili Even better than red chili |
Ingredients 8 fresh long green very hot chillis, minced/crushed 1 medium onion, chopped fine 5 cloves of garlic, crushed Half teaspoon oregano 1-2 teaspoons ground cumin 1 lb lean pork, cut into 1" cubes 1 cup chopped fresh tomatoes 1 can pinto beans or black-eyed peas, drained etc Up to 1-1/2 cups chicken/veg stock (water will do) Salt, black pepper, to taste Olive oil Heat oil in a large pan. Saut� onion, garlic until onion is clear. Add green chillis, saut� and stir. Add pork cubes, oregano and cumin and stir to brown all sides of the pork. Add tomato and stock/water until most of the pork cubes are covered with liquid. Stir well, reduce the heat to a simmer. Cover for 30 minutes. Check occasionally to make sure the stuff isn't scorching on the bottom. Add more stock if it's thicker/drier than you like. Add beans, and salt and black pepper. Stir well. Serve with fresh corn tortillas or rice. |
